Do former documents, like the Directory for Masses with Children, get side barred or are they no longer in force because there is a new GIRM [General Instruction of the Roman Missal, 3rd edition, 2002 in Latin/2003 in English]?

Yes, these documents remain in force, as in the General Instruction on the Roman Missal, 2002 says.

GIRM reiterates in footnote 32 that “special celebrations of Mass should observe the guidelines established for them [f]or Masses with special groups.” Some thought that the Directory for Masses with Children [1973], General Instruction of the Liturgy of the Hours [1971/1985] and others listed, were now to be ignored or no longer binding. GIRM reiterates their importance and binding use. Directories, instructions or other introductions to sacraments or sacramentals are always in place unless a new document specifically states that they are not or have been replaced.
